Cucumber Stuffed with Spicy Crab

The weekend after we started Dukan we had friends coming so I gathered up a few recipes and tweaked them to make them Dukan friendly. These delicious little cucumbers were a huge hit and gobbled up within minutes.

2 Cucumbers
1/4 cup sour cream
1/4 cup non fat cream cheese
3/4 cup crab meat
1/2 tsp lite salt
1/2 tsp pepper
1 tbs  green onion
Tabasco to taste

Peel cucumbers and cut into 1.5 inch pieces. Scoop out majority of the center with a melon baller. Mix remaining ingredients and spoon into center. Sprinkle Paprika on top and chill before serving.

 

 

Loving Dukan

My husband and I are now coming to the end of week three on Dukan and we are going great. I think this is the longest either of us have ever gone without cheating on a diet. I love that I don’t even feel the need to. There is chocolate and potato chips in the house and I have not once felt the need to go grabbing for them. I have thyroid issues and was off to a slow start but after making a few adjustments I am rolling along and losing a pound a day. I was drinking a lot of water and I have cut that to two bottles a day and have cut my tea down to one caffeinated cup in the morning with breakfast. I had given up soft drinks but changed my mind on that one. I now have one can of Coke Zero with dinner.

My exercise routine has been dancing with Xbox Kinect, some light weights, squats, lunges and stretching. I have also started jogging to get the mail. Our front yard is the size of a football field and it is slightly uphill on the way back. I almost lost my pants today and had to stop to tighten them up. Thankfully we don’t have many neighbors so no one had the displeasure of witnessing that.

After nearly three weeks hubby and I can both say that we are a fans of the Dukan diet. The food is great and we are able to eat things that we like by being creative. I love that I don’t have to count calories or points and at no point feel like I have eaten bird food. I can confidently say that we can stick to this long term.

Spicy Ham Roll

Spicy Ham RollMy husband and I love spicy foods and with me not being a great follower of recipe’s I am always trying to create something with items from the allowed foods list. I was short on time today and needed to make something lunch worthy for my husband who was coming home for his lunch break. I whipped up these yummy spicy ham rolls in just a few minutes. I made them extra spicy so I suggest adding chili to the mix until you are happy with it. I used two chopped chili peppers, half a block of fat free cream cheese and ten slices of ham. All you do is mix the chopped chili peppers with the cottage cheese and spread it on the ham, roll the ham up and enjoy! It is simple and tasty.

 

The Beginning

In the past five years my husband and I collectively have lost and gained close to 200 pounds. We have been close to our weight goals but have never quite made the effort required to get there. My husband turned 40 last year and I just turned 39, it is time to grow up and take control. On January 7th my husband and I embarked on a journey to shed the weight once and for all and lead healthy lifestyles with our two children aged four and five. We stopped smoking four months ago and gave up alcohol January 2nd, this is a complete lifestyle change for us.

We have both felt the need for change and despite many attempts we find ourselves with approximately 70 pounds each to lose. The decision to take control was brought on by multiple factors. My husband is not happy with himself and hates the way he looks and feels. He wants more energy and to feel comfortable running around the yard with the kids. For me it is our daughter starting school this year; I don’t want to be the fat mom.

We  decided to start the Protein based Dukan diet based on reviews and our personal preferences of food. Our past dieting attempts have been basically us choosing healthier foods, this will be the first time we have tried a set program together. It feels great for us to finally be focused, motivated and both on the same page when it comes to dieting. This blog will go through the ups and downs of our journey and share some of our culinary creations.
